The Domaine du Bois de Saint Jean produces its own Olive Oil from Provence, 100% natural and 100% local. Indeed, it is pressed less than 2km away from the property, at the Moulin à Huile de la Rétanque in Saint-Saturnin-les-Avignon. The olives are pressed there within 18 hours after their harvest in order to preserve all the benefits and taste qualities of this fruit.

True emblems of Provence, olive trees were first planted on the edge of vineyards or on slopes, for personal consumption. This practice is ancestral in the agricultural world and especially in Provence. It was common until the great frost of 1929 and annihilated in the second frost of 1956. Vincent and Xavier Anglès, proud of their native Provence, decided to create an orchard of olive trees and to produce their olive oil in secondary activity to that of the cellar.
